Pinterest and Fridge Inspirations

On the days where I just want to do "nothing" and relax, I spend part of it casually sipping coffee and perusing the internet world for food related interests, novelties and ideas. I also realize how little experience I have with food when I come upon recipes like from Pinterest

Looking at these makes me realize how much I need to diversify my "dinner portfolio". Perhaps I will try incorporating something eclectic once a month. It's definitely an eye opener every time I browse the food boards of Pinterest.

Once a week, I menu plan and create my grocery shopping lists accordingly. I started doing this in 2007 and have never stopped since. Yes, there are days when I don't feel like cooking and following a recipe on a day that I planned a recipe. On such days, I see what leftovers are in the fridge and impromptu a dinner. Last night, it was supposed to be chicken piccata, but I just was not feeling it. So, using leftovers in the fridge, I made my husband and I buffalo bacon chicken quesadillas. Here is what it entailed:

"Fridge Leftover Quesadilla"
3 center cut bacon pieces, cooked
1/2 of a  cooked chicken breast shredded
2/3 cup (or more if you want) reduced fat shredded cheese
2 Tablespoons scallions
Frank's Red Hot Sauce
2 Whole Wheat Flour Tortillas

Spread half the cheese on tortilla, layer the shredded chicken, scallions and pieces of bacon. Drizzle on the hot sauce (according to spice preference) and sprinkle remaining cheese. Place other tortilla on top. Using the leftover bacon grease and maybe some butter, cook the quesadilla  over medium heat in the pan you cooked the bacon in. Flip when the bottom side is golden brown.

Anyways, hope you all have a great Memorial Weekend. I've got ribs, a light slaw and corn for tomorrow's dinner planned. Extremely tempted to add a beer with that.
