A Cooking Marathon

My parents are visiting this week from California so I planned a family dinner with a few of my relatives and family friends. Oh my, was it quite the cooking marathon.

On the menu (recipes included with some):
 Desserts were wonderful too and definitely gave the kids a bit of sugar energy kick - they were NUTS!!

Some lessons learned; I should definitely incorporate better planning when it comes to calculating how much to cook. I had an entire tray of chicken adobo left over that was still in the oven! I forgot about the potato salad in the fridge and I had three too many unopened bags of pita chips and tortilla chips left over. I also have a gallon bag of cooked rice and plenty of Aloha juice cans in event we have an Aloha juice shortage. Oh well....no cooking for me this week. Spent two straight days cooking. The results: happy people, happy eating and yummy leftovers for the house this week.

If you ever want advice on how to timely prep food for guests at your home, I've definitely become a pro at it. The most I've ever cooked for was for 175 people (I had a good foodie friend partner up for this task!).
