Cutting Out the Bad, Welcoming the Good

Where did the time go?? It's December already!

This morning, I made for the first time, coconut flour pumpkin muffins. Using this recipe. Why coconut flour? Well, for those who are gluten sensitive (which I am not), it's a great alternative to any sort of wheat flour. Not only is it higher in fiber than regular flour, it's also low carbohydrate option because you end up using significantly less of it in a baking recipe such as coconut flour muffins. Replacing it in recipes that normally call for all purpose flour, requires an adjustment in liquids and eggs. Google is my best friend and has helped me find out how to successfully and tastefully use coconut flour for muffins and pancakes.

For those of you making a transition to a healthy lifestyle, the focus isn't just cutting out everything that is unhealthy, but more so, finding ways new ways to make delicious food choices that just  happen to be healthier. I always like to put a positive outlook on life. I could even count this as a life lesson! Cut out those from your life that are causing you grief and trouble, at the same time, build relationships with those that share and support your life goals.
