Yesterday was the original day I planned to make enchiladas, but I just didn't feel the enthusiasm to tackle the multiple steps in involved in making the dish alongside a homemade salsa. And when I don't enjoy the process, the experience of just cooking is just sub-par. I went with the flow, and felt my motivational level yesterday was all about waffles, bacon and eggs.
Why am I ranting about not being in the mood? Because I've come to realize that strictly adhering to your set menu schedule is not worth stressing over. I used to get in a tiff when my menu schedule was "off". In the grand scheme of family life, such a "tiff" is not worth stressing over. I'm a very busy person and have gladly accepted that scheduled things in life can't always happen when they're scheduled. It's okay to breathe and push a meal back a day or two.

Yes, cottage cheese mixed in with the chicken. Don't cringe!! I promise you, it's a great combination! The filling is deliciously savory, cheesy and just slightly creamy with the shredded chicken. It's...YUM.
And for the salsa, I recommend cutting the recipe in half (which I did not do). I have about 8 cups of salsa in my fridge now. Looks like it'll be salsa on everything for the next few days.
I guess the motto for today: don't stress the small stuff, you can always have breakfast for dinner :).
